General Background & Motivation

  1. Can you walk me through your culinary background and training?

  2. Why do you want to work at our restaurant specifically?

  3. What does “fine dining” mean to you?

  4. Who are some chefs you admire, and why?

  5. What do you enjoy most about being a line cook?


Technical Culinary Skills

  1. How do you ensure consistency and precision when plating dishes?

  2. Describe your knife skills. Which cuts are you most confident with?

  3. What’s your process for preparing mise en place for a busy service?

  4. How do you ensure food safety and hygiene standards are maintained?

  5. Can you explain the differences in cooking methods: braising, roasting, searing, and sous vide?

  6. How do you check that meats and fish are cooked to the correct temperature without cutting into them?

  7. How do you keep track of multiple orders at once during a rush?


Experience & Knowledge of High-End Dining

  1. What fine dining kitchen systems or stations have you worked on (grill, sauté, garde manger, pastry, etc.)?

  2. Tell me about your experience working with seasonal and locally sourced ingredients.

  3. How do you handle working with luxury ingredients (e.g., truffles, foie gras, caviar, wagyu)?

  4. How do you adapt when a guest requests a modification that could change the chef’s intended dish?

  5. What plating techniques or styles are you most comfortable with?


Teamwork & Pressure

  1. Describe a time you had to work through a particularly stressful dinner service. How did you stay focused?

  2. How do you communicate with fellow line cooks and servers during peak service?

  3. What do you do if you see a teammate struggling to keep up on the line?

  4. Tell me about a time you made a mistake in the kitchen. How did you handle it?


Professionalism & Growth

  1. How do you keep your skills sharp and continue learning new techniques?

  2. What are your long-term career goals in the culinary industry?

  3. How do you balance speed with precision and presentation?

  4. If the Executive Chef criticized your dish in front of the team, how would you respond?

  5. What do you think makes a great high-end dining experience for guests, beyond the food?
